LycoRed Natural Products has introduced Lyc-O-Mato® Fibers, an additive-free, dehydrated, fibrous tomato pulp concentrate, which contains 0.8%-1.3% lycopene and is meant for use as a natural red food colorant with a mild tomato flavor. Lyc-O-Mato Fi­bers come in a non-hydroscopic free-flowing powder that absorbs and holds large amounts of water when added to a food formulation. The Fibers improve resistance to syneresis and regulate texture and viscosity. Lyc-O-Mato Fibers are produced exclusively from non-GMO tomatoes.
